Easy Artichoke Dip

Believe me when I say that this is a blog you must not miss. This easy artichoke dip is one of the simplest recipes out there, and definitely delivers in the flavor department. With few ingredients, it is totally doable and totally delicious.

When I am with my mother in law, she always says we are quite the duo in the kitchen. As much as I would love to take credit for this crazy simple and scrumptious dip, all credit should go to her. She has passed this recipe to me, and let me tell you, this is one for the books.

If you need a super easy recipe for a small gathering or a crowd, this is it. Although I love to devour the artichoke dip myself, this is the perfect recipe that takes minutes to prepare but will impress anyone you share it with.

There are 4 ingredients. Yes…that’s right, FOUR. And the ratio of ingredients couldn’t be simpler. 1 can artichokes, ½ cup sour cream, ½ cup mayonnaise, and 1/3 cup parmesan cheese. Those few ingredients together will make something delectable! And you can even mix it all in the pan you will cook it in! I mean, does it get any simpler?

I am doubling the amount for this blog, because to be honest, one batch is not enough. Remember that the size of the batch determines cooking time, so if you are making one batch, the cook time will be less. I also added a dash of pepper and garlic powder, but this is totally optional. It does not need salt because the parmesan cheese provides enough salt for this recipe.

Artichoke Dip

Makes one double batch

Time: 5 minute preparation, 45 minute bake

2 cans artichokes
1 cup sour cream
1 cup mayonnaise
2/3 cup parmesan cheese, more for sprinkling
¼ tsp. garlic powder
¼ tsp. pepper


Preheat oven to 375°.


Drain artichokes and chop. Add artichokes to a large bowl.


Add the sour cream, mayonnaise, parmesan cheese, pepper, and garlic powder. Mix well.


Grease an 8×8 baking dish with butter or cooking spray. Pour dip in dish and place in oven.

If so inclined, top with an extra sprinkle of parmesan before putting in the oven.


Cook for about 45 minutes until hot, bubbly, and a little brown.


Serve hot or warm, with crackers, pretzels, or anything you like for dipping.
