Super Sides: Mashed Cauliflower

This is my first of many recipes in a series I’m calling “Super Sides.” Side dishes can be simple, or have a spectrum of ingredients, but I am going to share sides that I think are super. Mashed Cauliflower is my first super side and it is a must try.

I learned about mashed cauliflower a few years ago, and have loved it ever since. If you are looking for a different way to eat your vegetables, this recipe is just what you need. A classic and familiar vegetable gets a little flavor and a new appearance.

The mouth-feel of this side-dish is slightly smooth, but still has great texture because the cauliflower is mashed with a handheld potato masher rather than put in a blender or food processor. Not only is this a super side, it is a super simple side that will surprise and satisfy just about anyone. This is perfect for a quick family dinner, or can easily be made in large quantities for a party.

Mashed Cauliflower
Makes 8 side servings
Time: 25 minutes

medium cauliflower (8-9 inches in diameter)
2 tbsp. butter
2 tbsp. mayo
salt and pepper, to taste

Remove all green leaves, and core cauliflower by cutting it in half and cutting out the stem.

Chop cauliflower into 2 inch pieces.

Place in large pot and almost completely cover with cold water.

Turn on medium high heat and bring to a boil, which will take about 10 minutes depending on your stove.

Once boiling, turn heat down slightly and cook for 15 minutes, or until cauliflower is fork tender.

Drain and return to pot. Mash with potato masher until slightly smoother than rice-like consistency.

Add butter, mayo, salt and pepper and mix until butter is completely melted and all ingredients are combined.

Salt and pepper is to taste, I used about ¼ tsp. salt and 1/8th tsp. pepper.

Serve warm! It will be the perfect accompaniment to any protein, whether its a steak hot off the grill, or pan seared chicken breasts!
