This is my first of many recipes in a series I’m calling “Super Sides.” Side dishes can be simple, or have a spectrum of ingredients, but I am going to share sides that I think are super. Mashed Cauliflower is my first super side and it is a must try.
I learned about mashed cauliflower a few years ago, and have loved it ever since. If you are looking for a different way to eat your vegetables, this recipe is just what you need. A classic and familiar vegetable gets a little flavor and a new appearance.
The mouth-feel of this side-dish is slightly smooth, but still has great texture because the cauliflower is mashed with a handheld potato masher rather than put in a blender or food processor. Not only is this a super side, it is a super simple side that will surprise and satisfy just about anyone. This is perfect for a quick family dinner, or can easily be made in large quantities for a party.
Mashed Cauliflower
Makes 8 side servings
Time: 25 minutes
medium cauliflower (8-9 inches in diameter)
2 tbsp. butter
2 tbsp. mayo
salt and pepper, to taste
Couldn’t find my potatoe masher so I used a pastry blender. Worked fine.
A pastry blender is a perfect substitute for a potato masher!
