Tasty Taco Salad

If there is one things to know about me, I love a good salad. Salads can be so many things: crunchy, savory, tart, fresh, sweet, hearty. A pile of crisp lettuce decorated with toppings galore that is perfectly dressed is the way to my heart. Since I also love mexican food, this Taco Salad is in the running to be one of my favorites. It is topped with seasoned ground beef, crunchy tortilla chips, fresh veggies, and dressed with salsa, taco sauce, and a cilantro lime sour cream!

Since I use sour cream for somewhat of a dressing, to keep it lighter I do not add cheese to this salad. Most of the time, salads are totally customizable, which is one reason I love them. With this recipe, you can easily add a sprinkle of Mexican or cheddar cheese. Other optional toppings that are delicious but not featured in this post are beans, avocados, and fresh cilantro. You can even easily turn this recipe into a vegetarian one, by totally replacing the beef with beans instead! Instead of the beef, just sauté the beans with the taco seasoning.

If you have the time or the desire, you can make the salsa from scratch. I have the perfect fresh salsa recipe that I will share at a later date. I used store bought salsa to cut down on preparation time, to show that this is a perfect weeknight meal. The taco seasoning can also be homemade, using spices like cumin, garlic and onion powder, along with some cayenne, chili powder, paprika, salt, and pepper. Depending on the amount of each, you can customize a taco seasoning that is perfect for you!

Taco Salad
Makes 4 dinner Salads
Time: 15 minutes

3 romaine hearts, chopped
Beef:
1 tbsp. olive oil
1 lb. ground beef (90/10)
1 packet taco seasoning
Dressings:
2/3 cup sour cream
1 tbsp. cilantro, chopped
1 tbsp. lime juice
1 tsp. lime zest
salsa
taco sauce
salt and pepper, to taste
Toppings:
½ cup red onion, chopped
¼ cup jalapeno, chopped
½ cup tomato, seeded and chopped
2 cups tortilla chips, crushed

Heat oil on medium high heat. Sauté beef until mostly browned, about 5 minutes.

Add taco seasoning and sauté for 1 more minute.

Remove from heat and mix in juice from ½ of a lime.

Add sour cream to a small bowl. Add cilantro, lime juice, and lime zest to sour cream. Season with salt and pepper to taste. Mix and set aside.

To build salad, add lettuce to plate or bowl. Top with beef and sprinkle on onions, jalapeno, and tomatoes.

Dress the salad with salsa, sour cream, taco sauce, then top with crushed tortilla chips and enjoy!
